How do you roast coffee?

Roasting coffee is both science and art. During roasting, the time and temperature for each batch is recorded by the roaster on computer software. This is to determine the "recipe" for whichever origin we might be roasting. We roast each coffee, depending on its origin, altitude, moisture content and other aspects of its composition. Developing a tasty roast curve allows us to guarantee consistency.

How long do I have before my coffee gets old?

If you’re consistently getting your beans fresh, you're golden. The coffee will taste great within a month of roasting. (we usually cap a month at 5 weeks) After a month, the coffee will start to lose its sweetness and nuance as it becomes stale. Treat coffee like a living product - not a non perishable food item.

SOURCING

What is Fair Trade coffee?

Fair Trade aims makes the origin of the product completely transparent. Fair trade certified coffee directly supports farming families through fair prices, community development and environmental stewardship. These farmers market their own harvests through direct, long-term contracts with international buyers.

What is Organic coffee?

Certified Organic coffee is grown without manufactured fertilizers or chemicals in the growing or production process. This means cleaner coffee, purer air, land, and water. The coffee is grown with common everyday fertilizers, like coffee pulp, chicken manure, or compost. Organic farms fight climate change by releasing less carbon than farms that use chemicals. AND - Organic coffee beans are richer in antioxidants.
